Is there some special charset's I have to use when writing polish language
in html-pages?

You need to set your page (or site) language to one of the Polish language codes

For very short passages you can get away with the following:

Open Character Map and select the font Arial Unicode MS. This font
works well on the web. Chose your Polish characters and paste into
your HTML document.
In FrontPage select the text and change the font to Arial Unicode MS
and the Polish characters appear.
