Below you will see the type of info I get when I receive an email from 1
particular contact. Any idea why?

If it's just from one particular contact, then the most likely explanations
are that that person's mailer is sending ill-formed messages or something
between you and the sender's mail client is corrupting the messsage data is
such a way that Outlook can't interpret it upon reception.
