How do you rename a persona folder? When one is created, it is called
personal folder, but if I want to give it a specific name, how can I do that?

No, that is too simple.
When I look at the created folders, all of them labeled Personal Folder, and
tried to rename, the rename option was greyed out...in all of them. I created
another one, and gave it a different name in the process. But, the new name
is not shown, instead another Personal Folder was created, in its properties,
the name I gave it was shown, but I want Outlook to show the name I gave it
(like what happens in Outlook 2003).
Is there a way? Does anybody know of one?

Only if you accept the defaults. You can give it any display name you want
during the creation dialogue.
but if I want to give it a specific name, how can I
do that? Thanks for your help.

Right-click on the "Personal Folders" name and choose Properties, then
Advanced. Enter whatever you'd like in the "Name" field.
