I'm looking for ways to streamline our processes. There's gotta be a simple
way to take an Outlook contact, select "new letter to this contact", then
have a template autopopulate with their info. Is this possible and if so, how?

In some versions of Outlook there is. In others there isn't.
Wonder which you're using?
