anyone have any ideas about the best way to customize
outlook for clergy?

For example, can I change the name of "tasks" to Prayer
Requests?

No, but you can certainly add a Task folder called "Prayer Requests". Click
"New>Folder..." and click the "Folder contains" drop-down to show "Task
items". Name your folder, select the place where you want it placed and
click "OK".

You have raised a Good, but Big question.

Since that may be your life focus, consider
the following:
Ecclesiastical CALENDAR
Parish Member Records in CONTACTS
Church Event JOURNAL
Pastoral and Financial TASKS
etc......

Outlook presents the ultimate in customization:
It involves creating your own Folders and Forms.
New Forms must be based on EXISTING Forms
and you need to consider the TYPE of item posted.
Created Folders (conditions apply) may have THREADs -
ie you could put them on your Web, and track
discussions, responses etc.
....

Try to borrow a Book on Outlook Development (any
version of Outlook) to give you some Ideas, you only
have to skim it.
