Outlook Font and Spacing

When I open a new message in Outlook 2003, my signature is double spaced.
When I try to change it to single space, it changes the font and color of the
signature. After I try to type a message and then change from double to
single space, it changes the font automatically.

How do I get new messages to automatically open with single spacing? This
just started doing this today....has worked fine until now. Thanks!
