Outlook- e-mail Catagories

I previously had Office 2003, in which I setup e-mail categories (not color
coded).

I just upgraded to Office 2007 professional. The first time I choose on of
the color categories, it allows me to rename it to something other than "blue
category". But one of them I did not rename- and it appears it will never
let me rename it again. The Help in Outlook only seemed to tell me how to
rename it the first time.

In addition, I don't see an option to make categories that are not color
coded. What if I want more categories, then the 6 or so available colors.

Does any one know how to
1) Rename a color category at will.
2) Make more categories beyond the number or available colors?
 
Please right click the top folder (Personal Folders), choose Properties,
Upgrade to color categories.

You can rename, add and delete categories by clicking the Categorize button,
then All Categories. There you can add as many categories as you want and
assign one of 25 colors or none.
