Since I downloaded and installed the latest service
pack/security update (the big one everyone was waiting
for) Outlook now freezes after opening it and the error
message is always "not responding". I am not high on the
technical ladder rung and was told after I downloaded
that I should have waited as there were some known
problems. I can still access my email through another
address and also through the web.

What happens when you start Outlook in its safe mode ("outlook.exe
/safe")? If it loads okay then the problem is probably with an add-in
(Tools -> Options -> Other -> Advanced, Add-in Manager and COM
plug-ins). You can uncheck them to disable them (rather than uninstall
them) and check if Outlook loads okay in normal mode. If so then enable
them one at a time to check when Outlook fails to load, then you'll know
the last one you enabled isn't compatible with Windows XP Service Pack 2
(you didn't say what was the "big one" that you installed so I'm
guessing this is the one you meant).

Try locating and deleting the file "outcmd.dat" (located in
%APPDATA%\Microsoft\Outlook, a hidden folder).
