After I add a XPSP2 client to my domain, the filename for the OUTLOOK.PST
file is grayed out and I can't change it.

Location: Open Outlook click Options, then Mail Setup Tab, then Data Files.

You were never able to edit the filename this way because it is in use.
Rename the file through Explorer when Outlook is closed and then reconnect
it again to Outlook.

I was when the client was not apart of a domain

Still not possible as Outlook holds an exclusive lock on the file. Renaming
is impossible without killing this lock first.
