Outlook Categories

Nothing sticks to the "categories" field after it has been saved. I can see
the category on the individual window, but not collectively. Why?
 
What do you mean by "collectively"?

By clicking twice on the category an individual window opens and displays the
field category with whatever I typed in. However, when I click "tasks" in
the outlook tool bar a list of all my tasks appear and the "category" column
is empty even if I try to type something in it.
 
if you open a task and select a category, does it work?

Joe do you see that you can type in the category field and the new Category
won't be in the Master Category List? Click the Master Category button to
make your own set of Categories. They'll then be available right throughout
Outlook.

When you categorise a Task - what method do you use?

What do you see (in the Categories field) when you open a Task that you have
categorised?
