How are links in messages opened in the Outlook browser instead of IE (like
it was in Outlook 2000) ?

They don't. Outlook isn't a web browser.
 
I often use the browser inside outlook, and for the most part, it works fine.
I was just wondering how it was done in Outlook 2000, as I hoped to
configure the necessary settings to do so. I guess that is no longer
possible in later versions.
