We have some email in our corporation that is sometimes sent to the junk
e-mail folder when we do not want it to.

Is there a way to determine what the Outlook junk e-mail filter is acting
on? Can I tell if it being filtered on the 'From' address or something in
the body?

I know about the safe senders list but it would be easier to change our
'From' address or the message body.

You can certainly examine your blocked senders list and see if it contains
something that is causing the message to be flagged as junk.
Actions>Junk-Email>Junk E-mail Options>Blocked Senders. Also check the
International tab to see if you're blocking the country code. If it's in
neither, then the only conclusion is that it's something in the body. You
can't control what strings Outlook uses to scan the body.
