Outlook 2007 Default Due Date Removal

I don't know what I'm not seeing but can anyone tell me how to completely
remove any kind of automatic due date for my tasks? I didn't have this issue
with Outlook 2003 where I could just create a new task and it isn't
automatically given a due date.

Here is the strange part. Even if I create a new Task by clicking on "New" it
will open up the box to input the task and will automatically have "No Due
Date" in the box but then when I save and close it will all of a sudden give
it a due date of today??

I cannot repro that one. What account type are you using?
Do you get the same results when recreating your mail profile?
