When I click on a new email, it immediately shows up as 'read' - even before
I open it. Where can I change this so that it only shows up as read after
double-clicking to open?

Do you have the Reading Pane set to do that? Check the settings here: Tools
menu > Options > Other > Reading Pane
 
THANK YOU!! I had looked everywhere for an option. This has fixed it -
HUGE relief.
