Just today, Outlook started giving me intermittant
problems in checking my email. I have three accounts set
up to check. Today, those three accounts though they show
up under the Email Accounts, but the program seems to
think that i have no accounts set up so the send/receive
button is not available. When i go in to change the
default of one to another it says, "The specified account
was not found. It might have been deleted." But when i
press the Change button and test account settings, it
shows everything in tact. I've deleted and recreated all
of them, and still have the same problem.

Recreated the account or the complete profile? You can recreate (do not
copy) the mail profile in
Control Panel-> Mail-> button Show Profiles...

I did recreate but still had the same problems. Do i need
to uninstall and reinstall outlook? I hope not!!

A repair should do it as well. Insert the CD, start setup and choose Repair.
You might need to reapply the updates.
