I recently installed XP Home on my computer. It came with a trial version
which expired. Unfortunately I think my .pst folders got deleted.

Now when I try to send an e-mail I get the message "Cannot create the e-mail
because a data file to send and receive messages could not be found. To add
a data file, such as a personal folder file, double-click the Mail icon in
Windows Control Panel"

I have tried this but get the same message.

No such thing as a trial version of the operating system XP Home. Office,
however, does come in a trial version although there is no "Home" version.
You'll have to explain further. What email program are you using now?
version? operating system? Don't confuse Windows Outlook Express with
Office's Outlook. Those are different progams.
