OK, I've noticed that every now and then, I'll be exchanging emails
with someone, several with the same subject line, suddenly the subject
line in the list will show up greyed instead of black. Not all
subsequent messages with that subject are like that, but the ones that
were any sub thread from that particular message are. What's this
thing telling me?

You don't state your Outlook version, so it's anybody's guess.

You mean it does this for different reasons for different versions?

My suspicion is that at some point in the thread, Outlook's junk mail filter
is triggering on the message, causing it to change the color of the subject
line. Different versions of Outlook behave differently in this regard. Do
you have either your Junk mail or yout Adult Content mail filter enabled?
