I want to migrate a group of XP users to a new server and
a new 2003 domain and create new logons for each user. I
tried it with myself and I lost all my offline folders
and Outlook lost all of its offline cache. Is there a
way to keep all the users profile data and personal data
even though they are loging onto a new domain (Server
2003).

Export their profile using something like Files and Settings Transfer
Wizard..
Import their profile using the same thing.

(Other than the Files and Settings Transfer Wizard, you could just copy
their profiles with the built in tools in Windows 2000/XP or you could just
have them log into the machines in the new domain, log out and log in as an
admin user, change the registry setting pointing their NEW profile location
to the OLD profile directory (making sure that the permissions on that
directory allow their new account full rights) and log out - log them back
in..)

As far as a quick and dirty method - I don't have one for you if you are not
using roaming profiles. =)
