As far as i can tell, the only option availabe is the sort by name option, which is applied to each individual file in the folder
Play around with that by click start then selecting My Recent Documents, right click and select sort by name, near the bottom of the menu! the other option is to browse to "root\my documents and settings\current user\recent documents" and play around in that folder with customisations, however i don't think it was intended to be customised that much
