My wife is working on a Word document she began herself. Somehow - she can't
remember how - it always opens with E-mail headers. Neither of us can figure
out how to get it to revert to a regular Word document. Any advice greatly
appreciated.

Try this:
In Word, Select File > Send to > Mail Recipient or click the E-mail button
on the Standard toolbar. Both commands are toggle commands, i.e. they can be
used to toggle the e-mail header pane both on and off.

Note:
If the e-mail header pane is displayed in _all_ new documents you create
(however, it does not sound as if this is the case), your Normal.dot template
has somehow been saved with this setting. You will then need to locate and
open Normal.dot, turn off the e-mail header pane and save and close
Normal.dot. For information about Normal.dot, see this article:

That did it! I never noticed/understood the "toggle" nature of the command,
so clicking "Mail Recipient" was not intuitive. Thnak you very much for
taking the time to reply with the FIX!
