I assume you really want to turn the documents into text files, and
not just change their extensions...
First put all the documents (preferably copies of the originals, in
case you need to recover from a problem) into one or a few folders.
In File > New, go to the Other Documents tab and double-click the
Batch Conversion Wizard. Click the Next button on the first screen. On
the second screen, select 'Convert from Word to another format' and
then select 'Text' in the dropdown (sorry, csv isn't one of the
choices). On the remaining screens, choose the source and destination
folders and select the documents to convert. If you want all the .doc
files in the source folder, hit the Select All button. Then let it do
its stuff.
