has anyone ever heard of or seen or know where to find a
training manual, session, program etc. that teaches one to
use excel without a mouse?

Pretty much everything that you need to know about doing that will be
found in the on-line help topic "Keyboard Shortcuts". There isn't much
that you can't do with the keyboard.
