Well, the first thing I'd try, is to set your print area to your data. Highlight what you want to print, then in the File Menu, select "Set Print Area". That will tell Excel that "This is the data I want to print"
Then, when you go to print, you can tell the Printer to zoom the document to 1 page tall by one page wide
Under OfficeXP, the easiest way to do that, is to go to the Page Setup (Also under File), and in the Scaling region, you'll see two options "Adjust to 100% normal size" or "Fit to 1 page wide by 1 page tall". Select that second option, and Excel will rescale your document to print it all on one page
Setting the document to portrait or landscape would also help, so if your document is wider then it is tall, use landscape mode
This should help get your data all onto one page. Of course, if you have a LOT of data, you may want to go for Fit to 2 pages tall or something like that, so it's readable
