I am rebuilding a computer that originally had XP pro and
installing SB Server 2003. Can I take that original
version of XP Pro and install it on a new machine? Is
there an uninstall procedure or code or anything I have to
get before I re-build it?

Yes you may move it without any other procedure etc as long as it was not an
OEM version of Windows XP (often supplied with the PC or a piece of
hardware).
OEM licensed copies of Windows XP are "one time use" licensed and may not be
transferred to other devices.
