I would like to insert inot my header or footer the last time the file was saved

Is this possible

Yes. Use the Insert > Field dialog to put in a SaveDate field.
 
You will need to insert a field.

Go to your Header or Footer. Choose Insert + Field +
Date and Time. Choose SaveDate and choose the format you
want the date to be in.

In your header or footer type:
SaveDate
Then select it and press Ctrl-F9 then F9.
