Your best bet is to use an application designed for time-tracking. Outlook
is not designed for this specific task. You can use the Journal to tally
your time spent on tasks, but I would have no idea how you would track your
vacation, since that time is spent out of the office, presumably.
Try google.com for time tracking applications, as there are several good
ones out there that are designed specifically for this type of task.
