Windows Mail is sort of incomplete, and shipped with only a few language
dictionaries.
The newer Windows Live Mail is a better program, and has more language
options.
The latest beta has Italian.

If you are looking for an email program with an Italian spelling dictionary
built in, then Outlook is probably a better choice.
