Is it possible to replace the read messages in outlook?

We are sending email everyday to group of people with attachement, want to
replace the older one with new one everyday so email boxes doesn't eat up
space.

No, you do not control how other people are organizing their email. You do
control if you really need to send out an attachment or that you could
publish the information elsewhere and only notify them about the update.

Another thing that you could do to help them organize all the email you send
is by setting an expiry date on the message. This way they'll know it no
longer applies after a certain date.
