Incoming Mail

In Outlook 2003 how do I colour incoming mail. I.e. I used to have all mail
coming in from Joe Bloggs in the inbox in Red, all mail from Anon would be in
blue for example. I used to do this in Customize Outlook Today but now can't
figure how I do it.
