Ignore Originator's Format

Each time I reply to people that use a different format than me, my reply
automatically reverts to their format (color, line spacing, etc.). It even
jacks up my signature. How can I fix this? Also, I want to preserve the
"include and indent original message text".
 
That's for stationery fonts and besides "always use my fonts" is already
checked.

What you are seeing is the default for Outlook. It always uses the
original sender's format. You can manually change your reply format but
it is considered rude.

How do I do it? Rude or not. I think it sucks everytime my signature
automatically gets double spaced then the format turns to gray with a shitty
font when I reply to a certain person.
 
Did you ever consider that this person may have their font display set for
compatibility reasons or for readability? Or even if they don't
particularly like reading text in your preferred format? Honoring the
sender's format is a courteous thing to do. And, after all, if they have
emailed you, don't you think they already have your signature on file
somewhere?

If a person sends a message to you in plain text, chances are that they
don't want to deal with HTML.

Also, what makes you think that any of your recipients care about your
"signature"?
