If you do not enter a product key while installing then
windows will be fully functional for 30 days.
There have been noted online ways to extend that grace period legaly to 120
days.

You can google it.

After the grace period, you can either enter a product key or format and
install another OS.

anyone??thanks

I've wondered this myself, so I let one of my virtual machines expire.

Initially, instead of Explorer, starting, I get a "Activate Windows Now"
dialog, which lets me activate online, run in "Reduced functionality"
mode, retype my product key, or show other ways to activate.

I clicked on "Reduced functionality" and it brought up Internet
Explorer. There is no Task Bar (no start menu, clock, or tray)

WindowsKey+E was able to bring up Explorer, and I can start Notepad and
other apps.

When I launched %systemroot%\explorer.exe I got my start menu.

I haven't done any testing beyond the above, if I were Microsoft I'd put
some time limits on the sessions and possibly disable other
functionality.
