I don't want to see the email until I click on it

What do I reset on this new email account so that I do not see the message
until I click on it?

That isn't a problem with your mail account with whomever is your
provider. That is a configuration behavior of your e-mail client. In
Outlook, if you don't want to download the body of an e-mail until you
overtly open it, don't use the Preview pane. Close the Preview pane
(which in incorrectly named since it actually views the e-mail after
downloading it). Then when you select a message, it won't get
downloaded and shown in the Preview pane.

If you would like to see some of the message without previewing it, you
could use AutoPreview mode. This will show the first lines of each
e-mail but only as plain text. The message still must be downloaded so
the first few lines can be shown (I don't know if Outlook downloads the
whole message using the RETR command or downloads only a portion of it
using the TOP command).

The Preview pane can be set differently for each folder. I have the
Preview pane disabled for the Inbox and use the AutoPreview mode to see
a few lines in plain text for each message. I disable the Preview pane
in the Junk and Deleted Items folders, too, since I don't want to
accidentally be previewing any infected posts (in case the metadata bug
returns to Windows for images that are embedded [disposition=inline] in
the mails). I have the Preview pane enabled in the Sent Items folder
because those were sent by me. For any other folders that I've created
into which mails get moved (other than for spam), I also enabled the
Preview pane there since those are safe mails.
