I managed, somehow, to get Standby Mode enabled on the shutdown dialog but in the last few builds it's been grayed-out. I don't know what I did, but wouldn't have done this intentionally because it's a useful feature with no (apparent) size hit. Anybody know how to enable Standby Mode?

You probably have done something like:
1. Installed driver that does not support standby.
2. Or you have not installed driver. (For instance video driver.).

Have a look at the "Advanced Configuration and Power Interface" or "ACPI ***Processor PC" Component

Maybe your Setting is Always On there
