I would like to have a stationary that I use only occasionally, like for
thank-you notes, etc.

Is there a way to use it without making it my default stationary? Of course
I can go to Tools/Options and set it as my default for a single message and
then change it back afterward, but that isn't very convenient.

This is what templates are for. You could create a template for this and
store it in a folder "Letters & Faxes" in your user templates folder. Then
pick this template using File > New.

For more on the different kinds of templates and locations of templates
folders see http://addbalance.com/usersguide/templates.htm.
