How to change "from" field in e-mail

When my employer sends an e-mail, the "from" shows an informal name as
Charlie. He would like the recipient to see a more formal name, such as
Charles. How can he change this?
 
What type of account is being used?

We're using Outlook 2003 running to Microsoft exchange on a server.

Have a chat with the email/domain administrator.

The display name on his active directory profile should be updated.

Then it's not controlled within Outlook. You can change his display name in
AD U&C.
