How to apply own templates to incoming email attachments

When I open doc email attachments I wish to open them according to my own
defaults rather than those embedded in the document. I don't seem able to do
this - the embedded codes override my own. How can I import them to my own
specifications?

In Tools > Templates & Add-Ins, attach your template to the document
and check the box for "Automatically update document styles". Click
OK. Immediate re-open the dialog and uncheck the box -- don't leave it
checked.

the caveats about how it sometimes doesn't work.

From your mention of "embedded codes", I suspect you're a former
WordPerfect user and you're thinking in the same terms. Word doesn't
work at all the same way. If I'm correct, you'd probably get a benefit
