how should users be setup (admins on local pcs or not)

We are upgrading our win2k (where users are local admins) to xp (where it's
been suggested this is not a good practice, and we should switch to a model
where users are not admins).

We were told that the priviledges of an installation done from a central
point can be temporarily elevated for the software itself to be an admin,
but I'm concerned that the day-to-day running of software may be impacted if
we downgrade user's security level.

Any opinions on this practice?

Regular Users of a system seldom have a true need for Administrative rights
and the stability of the machine is compromised if they do.
