How do I?

Turn on automatic updates to:
Automatically upload update(s) whenever I'm connected to the internet.
And, install the update(s) at a specific time.

Had auto all at 3 a.m. Missed five updates the past 4 weeks apparently.
Should I change the time to when I'm more likely online 5/6/7 a.m.? Do I
have to be online before the set time begins?

If you're not connected to the internet at the time you've set, then
Automatic Update is not going to work...

The Windows/Microsoft Update page allows you to reset the time, as does
the Automatic Updates section of the Security Center (Control Panel).
 
Change it to notify you when there are updates. This allows you to download
and install them on your schedule.

Don't use additional code, Windows/Microsoft/Automatic Updates, that
gives the OS patching process more ways to fail.

Okay, set it at a more reasonable time within my normal online time. I have
having any red areas in security center.

What I want it to do is automatically download any security updates, notify
me when they're ready for install, then leave me alone until I'm ready, AND,
security center have all "greens". Any "red" indicates to me there is
something wrong.
