How do I to stop "£" character from arriving as "#" characters?

How do I stop the "£" characters in emails from being converted into "#"
characters?

If inbound, the font with which your mail is being displayed doesn't have
the British pound character, but rather the American pound in that position
in the font file. If on outbound, the same can be said: you have that
character in the font you're using, but the recipient doesn't.

No it's not as simple as that.
When I send email to myself,
it leaves my PC's Outlook (Office 2000) looking like a pound sign
("£"). But when it arrives it in Outlook again (on the same machine)
has been converted into a "#"! Surely this one PC has the same set of
fonts. So how come it has converted the character from one thing to
another?

However, if I CC: my @yahoo.com email account, that arrives fine.
Likewise if I write from my @yahoo.com account the "£" signs arrive
fine.

And, if I write from my other PC (in London Office) using Outlook
(2004) then the "£" sign leaves as a "£" and arrives as a "£"...
just fine.

Is there some regional setting for Office 2000
that applies to all msOffice programs (including
Outlook?!)
