How do I stop underline and bold from affecting the entire docume.

When I select text to bold, underline, or center and then click on the icon
for bold, underline, or center, it applies the format to the entire text. I
can then click on undo and it will leave the format effect on only the
selected text. This never used to happen on older versions. I'm now using
Word 2002 (XP). I presume that I need to change some option - but I can't
figure it out. Any help?
