How do I set up third-party digital certificates without IIS?

I am running a W2K server with a third party mail server. This program can
use SSL, but doesn't provide a tool for creating the CSR. IIS is not
installed or desired on this machine.

How do I request a certificate from a third party (such as Verisign or
Thawte) that can be used be the mail server? I have tried to use the MMC
snap-in but haven't had any luck. Should it be a "computer certifcate" or a
"service certificate"? When trying to request a cert, I receive the
"Windows cannot find a certification authority" message. How do I get
around this?
