How do I set up Outlook to send automatic messages?

I am an Associate Minister, and would like to send parishioners an email
recognizing birthdays, anniversaries, etc - the dates (obviously) to fit the
individual - but would only have to program it once - or have Outlook take it
from the Details section of the Contacts information. Is there a way to do
this?

Outlook has no built-in feature to do that. There may be add-ins to add that capability, though. You might start at http://www.slipstick.com/addins/contacts.htm or http://www.slipstick.com/addins/calendar.htm
