How do I set up an "out of office" immediate message? I will be out of the
office for a few days and would like people to have a pop-up or immediate
email back letting them know that I will be out of the office for a few days.
How can I set that up??

For an Exchange mailbox, click Tools>Out of Office Assistant. Otherwise,
