I am trying to set-up Microsoft Outlook to show "Undisclosed Recipients" in
the To: field when I am sending an email to multiple people, yet not wanting
to show everyone's email address and information. I looked into the Bcc: but
I don't want the To: field to show my name. I realize that mine name comes
up on the To and From, but I only want it on the From field. Any
suggestions?!?!

Create a Contact called "Undisclosed Recipients". For its Email address,
give it your own. Then, in the To field, put "Undisclosed Recipients" and
in the Bcc field, your addressees.
