Is there a way I can hide a message and then unhide later? Or a way to put
my messages into a folder and then hide the folder and then again unhide it
when I need to? Thanks.

No. You could copy the messages to the top level where outlook today is and
use find or turn off folder homepages when you need to view the messages.
You could also just add a folder homepage to any folder - but outlook today
makes a more secretive hiding place.

In addition to Diane's suggestion, you could also create PST to hold these
messages, opening the PST in order to add a message to it and closing it
when you're finished. This will prevent its appearance in your folder list
unless you want it there. Password-protecting it would also mean no one
else with access the file could open it.
