when opening a new document of lables, the guide lines have disappeared and i
can't seem to find a way to get them back.

Try going under "Table" then selecting "Show Gridlines". It sounds like maybe
that got clicked off somehow.

I don't necessarily want to see the actual grids, JUST the label guide lines.
Is there an option to remove the grid so that I can just see the outlines
instead?

Labels are set up as a table. If you want to see the label boundaries, you
use Table | Show Gridlines. Note that table gridlines are entirely different
from the drawing grid. If you are using Word 2007, it is all too easy to get
the latter. To get table gridlines, use Table Tools | Layout | Table | Show
Gridlines.
