How do I get my email to send an outgoing message to incoming mail

Going on vacation for a week, and when someone emails me I want them to
receive an email saying I am out of the office for a few days. How do I go
about setting that up on my Outlook Email?
 
Version of Outlook and type of mail account?

If you have a POP3 account, it might be better/easier to see if your ISP has
webmail and set an auto response there. Otherwise you have to create a rule
and leave Outlook running while you're gone.
