How do I export the ANSWERS to a survey done in a Word document (.

I know Word can do this - but I can't find the instructions. I would like to
create a Word document that requests users to fill in TEXT FIELDS with
answers to questions.. This part is easy. I then want to be able to Export
the answers (what has been entered into the text fields) to MS-Access of
MS-Excel. Or alternatively Import the answers to MS-Access of MS-Excel.
Basically this would be like creating a FORM (as per MS Access) using Word.
I'm sure this can be done using some kind of template document saved in an
"Internet" format or something.

Why Word only goes 50% of the way I do not know...
 
It doesn't go 50% of the way - Word 2003 supports XML. :-)

If you use Word form fields then you can save the data entered in the
fields as a delimited text file which can be imported into Access or
Excel. This option is found under Tools/Options/Save and called "Save
data only for forms".
