I created a form letter that went to two pages until I edited down to one
page. I still have a second page. How do I delete it?

Do CTRL-End to get to the end of the document,
There, do Backspace until you have only one page.

Before doing all this you could turn on the non-printing characters by
clicking on the Show All button on the tool bar (the ¶ next to the Zoom
dropdown). Then you will surely notice that you have superfluous paragraph
marks ( a few ¶) at the end of your letter. Just click on ¶ to hide the
non-printing characters after you are done, if you wish.

IMHO, it is a good habit to work with the non-printing character, this way
you see all the spaces you inserted (very tiny dots), Tab spaces (arrow
pointing straight to the right), line breaks (arrows going down and then to
the left), paragraph marks (¶ or pilcrow), page breaks (dotted lines) and
section breaks (double dotted lines). This way you know exactly what is
going on! But some people get irritated by those non-printing characters.
Habit I guess... I get irritated when I do not see them! When people ask me
to help them at their computers, the first thing I do is display the non
printing characters.
