How do I customize incoming email addresses in Outlook 2003

Incoming emails carry the senders email address. How can I set up Outlook
so that mail from a particular person will display an identifying name that I
choose. Instead of "(e-mail address removed)", my inbox would show "John from
the Office" or "John Smith".

This is important when you have two or more friends with very similar email
addresses...
 
You can't choose that. The sender does. If the sender is in your address
book, you can right click on the address to see the Properties.
